For this third event in our scholarly conference series, we are privileged to welcome Michel Lambert, a historian and passionate advocate for Quebec's culinary heritage.
Michel Lambert taught literature for 35 years at the college level in both Montreal and Chicoutimi. At the same time, he served as head chef at La Maison de la Rivière, his inn located in the Saguenay region, from 1986 to 2000. A prolific author, he is renowned for his work documenting Quebec's culinary traditions. Among his publications are the five-volume collection Histoire de la cuisine familiale du Québec (GID, 2006–2013) and the book L’érable et la perdrix, co-authored with Élisabeth Cardin (Cardinal, 2021). In addition to writing, Michel shares his expertise on his website, quebecuisine.ca, which features recipes from various regions of Quebec.
His lecture, titled "L'érable, d'hier à demain" will delve into the profound relationship between the peoples who have inhabited Quebec and the sugar maple. From its symbolic and practical significance for Indigenous communities to its integration into the culinary and cultural traditions of Quebecers, Michel Lambert will explore the historical and modern dimensions of this iconic symbol. A fascinating perspective on the evolution of our sweet heritage and its role in Quebec's future.
